Recipes for Dads
Slow Roast Pork Recipe

This Slow Roast Pork Recipe is especially for Dads. If you were wondering how to cook roast, here you are. We try to choose "man recipes" that are easy to cook and require very few steps. This one definitely qualifies!

It's actually two recipes in one, and provides a (more or less) complete meal.

Note: Both of these dishes should be prepped separately but cooked together for maximum ease. Just pop them both into the oven at the exact same time. (See video for clarification.)

Slow Roast Pork Recipe

  • 1 Pork butt roast about 3 or 4 pounds, at room temperature

  • 1/3 Cup Worcestershire Sauce

  • 3/4 Cup brown sugar

  • 1/2 Cup apple juice

  • 1/2 teaspoon salt

Preheat oven to 400 degrees F.

Place pork roast in a heavy pot with a tight fitting lid. Preferably just large enough to hold the roast. Sprinkle the entire roast with the Worcestershire sauce, turning. Take the brown sugar and mash it all over the roast, covering all sides. Pour the apple juice in the bottom of the pan, not over the meat. Cover tightly. (Save the salt and add it to the gravy at the end.)

Slow Roasted Potatoes

  • Small potatoes, about 2 per person, cut into quarters

  • Carrots, 1 or 2 per person, peeled and cut into sections

  • 1 Onion cut into quarters

  • 3 Tbs. melted butter

  • 1 tsp. Paprika

  • 1/2 tsp. Salt

  • 1 - 2 cloves fresh garlic (or dry garlic powder)

  • Fresh ground black pepper to taste

Combine all ingredients in a heavy pot or casserole dish with tight fitting lid. Stir to coat with butter and spices.

Cooking Instructions

Put both dishes in the oven at at the same time. The oven should be preheated to 400 degrees.

Important: After 5 minutes, turn the oven down to 200 degrees F.

Roast both dishes in the oven for 4 to 5 hours. Don't even open the oven door for at least 4 hours.

You'll know they are done when the veggies are fork tender and the roast falls apart. If the roast isn't tender, you can put it back in for another 30 minutes to an hour.
