Fresh Herb Pasta

This Fresh Herb Pasta is a really simple and very versatile recipe that we use all the time at our house.

The only ingredients you really need for this recipe are the pasta, oil, herbs and seasoning. But you can add anything you want to it to make it a meal.

We usually make this when we have fresh herbs leftover from another recipe. We always keep a package of healthy whole wheat pasta in the cupboard. And of course we always have good quality extra virgin olive oil and fresh garlic. Then it's just a matter of looking through the fridge and freezer to see what veggies and/or meat we have on hand that need to be used.

This is one of those "kitchen sink" recipes that you can put almost anything in.


Fresh Herb Pasta


Main Ingredients

  • 1 Package of your favorite whole wheat pasta
  • 1/4 cup extra virgin olive oil
  • 2 or more Tbs. of your favorite fresh Italian herb (parsley, thyme, oregano, etc.)
  • 2 cloves of fresh garlic, finely minced
  • Salt and pepper to taste

Optional Ingredients

  • 1/2 lbs or more of shrimp or chicken
  • 1 cup or more of fresh (or even frozen) veggies (peppers, onions, broccoli, mushrooms, peas, or anything else that sounds good.)
  • Parmesan cheese
  • 1/2 tsp freshly ground nutmeg
  • 1/3 cup dry white wine

Directions:

Follow the directions on the package for the pasta. Meanwhile, heat a little oil in a skillet and brown your optional ingredients. Chicken will need to be cooked through. Veggies just need to be cooked until tender. Shrimp and fresh herbs will only need to cook for about 5 minutes, so they should be added towards the end with the wine and nutmeg.

Drain your pasta and toss everything together, seasoning with salt and pepper to taste. (Add the parmesan to the toss if you are using it.)

Serve hot.
