Healthy Recipes Black Bean and Turkey Enchiladas
We made these Black Bean and Turkey Enchiladas a few weeks ago when Beth's Mom was in town for the birth of baby Lilly, and it was delicious. (Easy too.) 8 six inch whole wheat tortillas
Enchilada Filling - 1/2 lbs. of sliced, nitrate free turkey, cut into strips
- 1 can (16 oz) of black beans
- 1/2 cup of shredded cheese
- 1/2 cup of
Home Made Salsa
- 1/4 cup of sour cream
Sauce - 3/4 cup
Home Made Salsa
- 1/4 cup sour cream
- 2 Tbs fresh chopped cilantro
- 1/4 cup cheese
- Cayenne pepper to taste (optional)
Heat oven to 350 degrees. Grease a 13X9 baking dish.
Mix all of the enchilada filling in a bowl. Place a few spoonfuls of the mixture down the middle of each tortilla and roll. Place seam side down in baking dish.
Mix sauce ingredients. Pour over the enchiladas and sprinkle with cheese.
Cover and bake 30 - 35 minutes until filling is hot and cheese is melted.
